  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 medium carrots, sliced thinly
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • 16 oz store-bought gnocchi
  • 2 cups fresh spinach or kale

Instructions

  1. Sauté onions and garlic in olive oil over medium heat until translucent (about 2-3 minutes).
  2. Add carrots and celery; sauté for another 5 minutes until slightly softened.
  3. Add chicken breasts, season with salt and pepper, and cook until golden brown (6-7 minutes).
  4. Pour in chicken broth and thyme; bring to a boil then reduce heat to simmer for about 15 minutes.
  5. Shred or chop the cooked chicken, return it to the pot, and stir in heavy cream.
  6. Add gnocchi and greens; cook for an additional 5-7 minutes until gnocchi floats to the top.
