  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup pesto sauce (homemade or store-bought)
  • 1 cup freshly grated Parmesan cheese (divided)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and season chicken breasts with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil. Sear chicken for about 5 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for one minute. Add heavy cream and pesto sauce, stirring in half of the Parmesan cheese; simmer until thickened.
  4. Return chicken to the skillet, spooning sauce over it. Sprinkle remaining Parmesan on top and transfer to the oven.
  5. Bake uncovered for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  6. Serve on plates with extra sauce drizzled over; enjoy with pasta or bread.
