  • 8 oz fettuccine or penne pasta
  • 2 tbsp butter or olive oil
  • 2 cloves garlic, minced
  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 10 fresh sage leaves
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of pasta water.
  2. In a skillet over medium heat, melt butter or oil. Sauté minced garlic and sage until fragrant (about 1 minute).
  3. Lower the heat, add heavy cream, and stir in pumpkin puree until smooth. If too thick, add reserved pasta water to reach desired consistency.
  4. Season with salt and pepper, then mix in Parmesan cheese. Simmer for 5 minutes.
  5. Toss cooked pasta with the sauce until well coated.
  6. Serve garnished with additional Parmesan cheese and crispy sage leaves if desired.
