Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup fresh ricotta cheese
  • 6 oz thick-cut bacon
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain.
  2. In a skillet, cook chopped bacon over medium heat until crispy. Remove and leave some fat in the skillet.
  3. Sauté minced garlic in the same skillet until fragrant.
  4. Lower heat, return pasta to the skillet, add ricotta and bacon bits. Toss gently, adding reserved pasta water if needed for creaminess.
  5. Stir in Parmesan cheese, salt, pepper, and basil.
  6. Serve warm, garnished with additional cheese and basil.
