Description

Ingredients

  • 2 lbs Yukon Gold or red potatoes, diced
  • 1 cup dill pickles, chopped
  • ½ cup red onion, finely chopped
  • ¼ cup fresh dill, chopped
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and dice the potatoes into even chunks. Place them in a pot covered with cold water.
  2. Bring water to a boil over medium-high heat. Add salt and cook potatoes until fork-tender (10-15 minutes). Drain and cool.
  3. In a large bowl, mix sour cream, mayo, lemon juice, salt, and pepper until smooth.
  4. Gently fold in cooled potatoes, dill pickles, red onion, and fresh dill.
  5. Adjust seasoning as needed and serve immediately or chill for an hour to enhance flavors.
