  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 large eggs (lightly beaten)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup vegetable oil (for frying)

Instructions

  1. Wash and dry the tomatoes, then slice them into thick rounds.
  2. Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with cornmeal mixed with flour.
  3. Dip each tomato slice in flour, then in eggs, and finally coat with the cornmeal mixture.
  4. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  5. Fry tomato slices in batches for about 3-4 minutes per side until golden brown.
  6. Drain on paper towels and serve hot.
