- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup panko breadcrumbs
- 3 cloves fresh garlic, minced
- 1/2 cup raw honey
- 2 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lemon juice
- 6 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup Caesar dressing
Instructions
- Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
- Season chicken with salt and pepper. In one bowl, mix panko breadcrumbs with minced garlic. In another bowl, whisk together honey, soy sauce, and lemon juice.
- Dip each chicken breast in the honey mixture and coat thoroughly in panko. Place on the prepared baking dish.
- Bake for 25-30 minutes until golden brown and cooked through.
- While chicken bakes, chop romaine and mix in cherry tomatoes in a large bowl.
- Once chicken is done, slice into strips and toss greens with Caesar dressing before adding chicken on top.
- Drizzle any remaining honey sauce over the salad before serving.
