Description

  • 2 medium zucchinis (about 300g)
  • 1 cup freshly grated parmesan cheese (100g)
  • 1 cup panko breadcrumbs (100g)
  • 2 large eggs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry the zucchinis; cut off the ends and slice them into half-inch wide strips.
  3. In one bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper.
  4. In another bowl, whisk the eggs until frothy.
  5. Dip each zucchini strip in the egg mixture first, then coat thoroughly in the breadcrumb mixture.
  6. Place the coated zucchini twists on the baking sheet in a single layer and drizzle with olive oil.
  7. Bake for about 20–25 minutes or until golden brown and crispy.
