- 1 cup panko breadcrumbs (100g)

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and dry the zucchinis; cut off the ends and slice them into half-inch wide strips.
- In one bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper.
- In another bowl, whisk the eggs until frothy.
- Dip each zucchini strip in the egg mixture first, then coat thoroughly in the breadcrumb mixture.
- Place the coated zucchini twists on the baking sheet in a single layer and drizzle with olive oil.
- Bake for about 20–25 minutes or until golden brown and crispy.
