  • 1 pound baby potatoes
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • Juice of 1 lemon
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil baby potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly.
  3. Smash each potato gently with the bottom of a glass until about half an inch thick and place on the prepared baking sheet.
  4. Drizzle smashed potatoes with olive oil, sprinkle with salt, pepper, and herbs. Roast for 25-30 minutes until golden brown.
  5. In a bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
  6. Toss roasted potatoes with fresh herbs and drizzle with dressing. Serve warm or at room temperature.
