  • 3 lbs beef chuck roast
  • 6 dried guajillo chiles, stems and seeds removed
  • 1 medium onion, coarsely chopped
  • 5 garlic cloves
  • 1 cup fresh cilantro, for garnish
  • Juice of 2 limes
  • 2 cups low-sodium beef broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • Salt to taste

Instructions

  1. Soak guajillo chiles in hot water for 15 minutes until softened.
  2. Blend soaked chiles with onion, garlic, cumin, oregano, black pepper, and lime juice until smooth.
  3. Season the beef chuck roast with salt and pepper; sear in a hot skillet for 3-4 minutes per side until browned.
  4. Place seared beef in the crock pot; pour the marinade and beef broth over it. Stir gently.
  5. Cover and cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
  6. Shred the beef with forks and serve in warm tortillas topped with chopped onions, cilantro, and additional lime juice.
