- 3 lbs beef chuck roast
- 6 dried guajillo chiles, stems and seeds removed
- 1 medium onion, coarsely chopped
- 5 garlic cloves
- 1 cup fresh cilantro, for garnish
- Juice of 2 limes
- 2 cups low-sodium beef broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- ½ tsp black pepper
- Salt to taste
Instructions
- Soak guajillo chiles in hot water for 15 minutes until softened.
- Blend soaked chiles with onion, garlic, cumin, oregano, black pepper, and lime juice until smooth.
- Season the beef chuck roast with salt and pepper; sear in a hot skillet for 3-4 minutes per side until browned.
- Place seared beef in the crock pot; pour the marinade and beef broth over it. Stir gently.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
- Shred the beef with forks and serve in warm tortillas topped with chopped onions, cilantro, and additional lime juice.
