- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 2 cups fresh or frozen corn
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese, cubed
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Chop the onion and mince the garlic. Dice the chicken into bite-sized pieces.
- Layer the diced chicken in the bottom of the crockpot, followed by onions, garlic, corn, thyme, smoked paprika, salt, and pepper. Pour in the chicken broth until all ingredients are covered.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- About 30 minutes before serving, stir in cubed cream cheese until melted. Taste and adjust seasoning if needed.
