Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 bell peppers, sliced (any color)
  • 2 medium carrots, sliced
  • 4 green onions, chopped
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 8 oz lo mein noodles, cooked per package instructions
  • 1 cup low-sodium chicken broth
  • 1-inch piece ginger root, grated
  • 1 tbsp cornstarch (optional)

Instructions

  1. Chop chicken into bite-sized pieces and prepare all vegetables.
  2. In the crockpot, combine chicken, bell peppers, carrots, garlic, green onions, ginger root, and soy sauce. Mix well.
  3. Pour in chicken broth until everything is submerged. Drizzle with sesame oil.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, stir in cooked lo mein noodles.
