- 4 boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 4 tbsp extra virgin olive oil
- 2 tbsp lemon juice, freshly squeezed
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and chop vegetables: slice cucumbers and halve cherry tomatoes.
- In a bowl, mix minced garlic with 2 tbsp olive oil and dried oregano. Rub over chicken breasts.
- Grill seasoned chicken over medium heat for about 6 minutes per side until cooked through. Optionally grill some vegetables alongside for added flavor.
- Toss cubed potatoes in remaining olive oil, salt, and pepper; spread on a baking sheet and roast for about 25 minutes until crispy.
- Once everything is cooked, slice the grilled chicken and combine it with roasted potatoes in a large bowl along with vegetables. Crumble feta on top.
- Drizzle with lemon juice and remaining olive oil before tossing gently to combine.
