Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup fresh dill, chopped
  • 1/4 cup red onion, finely sliced

  • Salt & pepper to taste

Instructions

  2. Rinse canned chickpeas under cold water and drain well.
  3. Finely chop the red onion and fresh dill.
  4. In a small bowl, whisk together lemon juice and olive oil until emulsified.
  5. In a large mixing bowl, combine cucumbers, chickpeas, red onion, and dill. Drizzle with dressing and season with salt and pepper to taste.
