- 1/2 cup honey
- 2 large eggs
- 1 tsp vanilla extract

- 3 tbsp cocoa powder (for filling)
- 1/4 cup whole milk (for filling)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in honey and vanilla extract until smooth.
- In another bowl, whisk together flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients until a soft dough forms.
- Cover the dough with plastic wrap and refrigerate for about 30 minutes.
- Scoop out portions of dough and roll them into balls.
- Place cookie balls on parchment-lined baking sheets about 2 inches apart. Bake for 10-12 minutes until slightly golden around the edges but still soft in the center.
- Once cooled, cut off the tops gently, prepare the chocolate filling by mixing cocoa powder with milk until creamy, fill each cookie base, and place their “hats” back on top.
