Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 lb asparagus
  • 4 tbsp unsalted butter
  • 3 cloves fresh garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay large sheets of aluminum foil on a baking tray. Place one salmon fillet on each sheet.
  3. Surround the salmon with asparagus spears. Drizzle olive oil over both, then season generously with salt and pepper.
  4. In a small bowl, combine melted butter, minced garlic, lemon juice, lemon zest, and chopped parsley. Mix well.
  5. Pour the lemon garlic butter sauce over the salmon and asparagus.
  6. Fold the foil tightly around the salmon packets to seal in steam.
  7. Bake in the preheated oven for about 15-20 minutes or until the salmon flakes easily with a fork.
