- 1 lb ground lamb
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh mint, chopped
- 1 cup panko breadcrumbs
- 2 large eggs
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- 2 tbsp olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté the onion until translucent (about 5 minutes), then add garlic and cook until fragrant.
- In a large bowl, combine ground lamb, sautéed onions, garlic, herbs, panko breadcrumbs, eggs, feta cheese, salt, and pepper. Mix gently but thoroughly.
- Grease a mini muffin tin and spoon two tablespoons of the mixture into each cup.
- Bake for 20-25 minutes or until golden brown. Let cool slightly before removing from the tin.
