Description

Lamb Cupcakes are savory mini delights made with tender ground lamb, aromatic herbs, and feta cheese. Perfect for gatherings, these flavorful bites will impress your guests while adding a unique twist to your menu.


Ingredients

  • 1 lb ground lamb
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh mint, chopped
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 2 tbsp olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the onion until translucent (about 5 minutes), then add garlic and cook until fragrant.
  3. In a large bowl, combine ground lamb, sautéed onions, garlic, herbs, panko breadcrumbs, eggs, feta cheese, salt, and pepper. Mix gently but thoroughly.
  4. Grease a mini muffin tin and spoon two tablespoons of the mixture into each cup.
  5. Bake for 20-25 minutes or until golden brown. Let cool slightly before removing from the tin.
