Ingredients
- Mascarpone cheese
- Quality white chocolate
- Fresh raspberries
- Savoiardi (Ladyfingers)
- Strong coffee
- Granulated sugar
- Vanilla extract
- Unsweetened cocoa powder
Instructions
- Brew 1 cup of strong coffee; let it cool slightly and stir in 1 tablespoon of sugar.
- Melt 8 ounces of high-quality white chocolate until smooth; allow to cool slightly.
- In a bowl, whip 1 cup of heavy cream until soft peaks form.
- Gently fold the melted white chocolate into 16 ounces of mascarpone cheese and a splash of vanilla extract. Then fold in the whipped cream.
- Quickly dip each savoiardi into the cooled coffee mixture and layer them at the bottom of your serving dish.
- Spread half the mascarpone mixture over the ladyfingers, followed by fresh raspberries. Repeat with another layer.
- Cover and refrigerate for at least 4 hours or overnight for best flavor. Dust with cocoa powder before serving.
