Scale
- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 tsp active dry yeast (1 packet)
- 1 cup warm milk (110°F)
- 2 large eggs
- 1 tsp salt
- 1/4 cup unsalted butter, melted
- 1 tsp almond extract
- 1/4 cup sliced almonds (for decoration)
- Optional: poppy seeds or sesame seeds for eyes
Instructions
- Activate the yeast: Warm milk to about 110°F. Mix warm milk, sugar, and yeast in a bowl; let sit until frothy (about 5 minutes).
- Make the dough: In a large bowl, combine flour and salt. Create a well in the center; add eggs, melted butter, almond extract, and yeast mixture. Stir until combined.
- Knead the dough: Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.
- First rise: Place dough in an oiled bowl; cover with plastic wrap. Let rise in a warm place until doubled in size (about 1 hour).
- Shape your bunny: Punch down the dough; divide into one large piece for the body and smaller pieces for head and ears. Shape accordingly.
- Decorate: Attach sliced almonds as ears and use poppy or sesame seeds as eyes.
- Final rise & bake: Let shaped bunny rise on a baking sheet until puffed (about 30 minutes). Preheat oven to 350°F; bake for 25-30 minutes until golden brown.
