- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain rice
- 1 cup tzatziki sauce (store-bought or homemade)
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 cups water
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
- Spread uncooked long-grain rice evenly in the bottom of the baking dish.
- Place chicken breasts on top of the rice and season generously with salt, pepper, and garlic powder.
- In a bowl, mix tzatziki sauce, lemon juice, and olive oil until smooth. Pour over chicken and rice evenly.
- Carefully add water around the edges of the dish without disturbing the chicken.
- Cover tightly with aluminum foil and bake for 45-50 minutes until chicken is cooked through (165°F) and rice has absorbed most of the liquid.
- Let sit for a few minutes before serving.
