Ingredients

  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs

  • ½ tsp salt
  • Food coloring (optional)
  • Icing for decoration

Instructions

  1. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Add eggs one at a time, mixing in vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Roll out chilled dough on a floured surface to about ¼ inch thick and cut into egg shapes using cookie cutters.
  7. Place cookies on lined baking sheets and bake for 8–10 minutes or until edges are lightly golden.
