Instructions
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing in vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture until just mixed.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll out chilled dough on a floured surface to about ¼ inch thick and cut into egg shapes using cookie cutters.
- Place cookies on lined baking sheets and bake for 8–10 minutes or until edges are lightly golden.
