Description

Bird’s Nest Cupcakes are a delightful springtime treat, featuring soft vanilla cupcakes topped with a whimsical chocolate and coconut nest—a perfect dessert for any festive occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ cup unsweetened cocoa powder
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • ¾ cup whole milk
  • 1 tsp vanilla extract
  • 2 cups shredded sweetened coconut
  • 1 cup semi-sweet chocolate chips
  • Candy eggs for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine flour, sugar, baking powder, cocoa powder, and salt.
  3. Beat in softened butter and eggs until smooth; gradually mix in milk and vanilla until well blended.
  4. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  5. Melt chocolate chips in a microwave-safe bowl; stir in shredded coconut until coated to form nests.
  6. Top cooled cupcakes with the coconut-chocolate mixture and place candy eggs on top.
