Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream the softened butter until smooth. Gradually add the dry mixture along with lemon zest.
- Add eggs one at a time, mixing well after each addition. Stir in lemon juice and vanilla extract.
- Gently fold in fresh blueberries.
- Pour batter into the prepared pan and bake for 25–30 minutes or until golden brown. A toothpick inserted should come out clean.
- Allow to cool slightly before transferring to a wire rack.
