  • 8 oz spaghetti or linguine
  • 2 salmon fillets (6 oz each)
  • 1 cup labneh
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh dill (optional)

Instructions

  1. In a large pot of salted water, cook spaghetti or linguine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Season salmon with salt and pepper, then sear skin-side down for about 4 minutes until golden brown. Flip gently and cook for another 3 minutes until flaky.
  3. In a bowl, mix labneh, minced garlic, lemon juice, salt, and pepper until smooth.
  4. Add drained pasta to the skillet with salmon; break salmon into chunks. Pour over labneh sauce and mix well, adding reserved pasta water as needed for desired consistency.
  5. Plate the pasta and garnish with fresh dill if desired. Serve warm.
