- Preheat your oven to 325°F (160°C). Prepare ramekins by placing them in a baking dish.
- In a saucepan, heat the heavy cream, nutmeg, and vanilla over medium heat until hot but not boiling.
- In a bowl, whisk together egg yolks and sugar until pale and slightly thickened.
- Gradually pour warm cream into the egg mixture while whisking continuously to temper the eggs.
- Pour the custard into ramekins, filling them three-quarters full, and place the baking dish in the oven filled with hot water.
- Bake for 30-35 minutes until set around the edges but still slightly jiggly in the center.
- Once cooled, sprinkle sugar on top of each custard and use a kitchen torch to caramelize until golden brown.
