Description

Filipino Carioca are delightful, chewy treats made from glutinous rice flour and coconut milk, coated in a sugary glaze and rolled in desiccated coconut. Easy to prepare and utterly addictive, they make a wonderful addition to your dessert table or snack time.


Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 1/2 cup full-fat coconut milk
  • 1/3 cup granulated sugar (adjust to taste)
  • 1/2 cup desiccated coconut
  • Vegetable oil for frying

Instructions

  1. Mix glutinous rice flour and water in a bowl until smooth; let rest for 10 minutes.
  2. Grease your hands with oil, then shape the dough into golf ball-sized balls.
  3. Heat vegetable oil in a deep pan over medium heat; test with one ball before frying more.
  4. Fry until golden brown on all sides, about 5-7 minutes.
  5. Remove from oil and cool on paper towels; roll in sugar and desiccated coconut mixture while warm.
