  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cloves garlic, minced
  • 1 thumb-sized piece ginger, grated
  • 2 tbsp yellow curry powder
  • 1 tbsp fish sauce
  • 1 medium onion, diced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar

Instructions

  1. Prepare your ingredients by chopping onions, mincing garlic, and grating ginger.
  2. In a large pot over medium heat, sauté onions in oil until soft and translucent. Add garlic and ginger and cook until fragrant.
  3. Add chicken thighs to the pot and brown all sides without fully cooking them.
