Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large red onion, cut into wedges
- 2 tbsp extra virgin olive oil
- 2 tsp chili powder
- 1 tsp cumin
- Juice of 1 lime
- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine sliced chicken breasts, bell peppers, and onion. Drizzle with olive oil and sprinkle with chili powder, cumin, salt, and pepper. Toss until evenly coated.
- Spread the mixture onto the prepared baking sheet in a single layer.
- Bake for 20-25 minutes or until the chicken is cooked through and veggies are tender with slightly charred edges.
- Remove from oven and drizzle fresh lime juice over the top before serving.
