  • 2 lbs beef short ribs
  • 3 large sweet onions (sliced)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 sprigs fresh thyme
  • 1 baguette (sliced)
  • 1 cup Gruyère cheese (shredded)

Instructions

  1. Prep your ingredients: Slice the onions and mince the garlic.
  2. Sear the short ribs in a large pot over medium-high heat until browned on all sides. Remove and set aside.
  3. In the same pot, caramelize sliced onions over medium heat for about 25 minutes until golden brown.
  4. Add minced garlic and cook until fragrant. Deglaze the pot with red wine, scraping up any browned bits.
  5. Return short ribs to the pot, add beef broth and thyme, then bring to a boil. Reduce heat and simmer for 2 hours until meat is tender.
  6. Toast baguette slices under the broiler until golden brown.
  7. Serve soup in bowls, top with toasted baguette, sprinkle Gruyère cheese on top, and broil until bubbly.
