Description

Asparagus and Radish Salad with Caper Vinaigrette is a bright, refreshing dish that combines fresh vegetables and a zesty dressing for an unforgettable taste experience.


Ingredients

  • Fresh asparagus
  • Radishes
  • Capers
  • Extra virgin olive oil
  • Lemon juice
  • Salt & pepper

Instructions

  1. Rinse asparagus and radishes under cold water. Trim woody ends off the asparagus and slice radishes thinly.
  2. Blanch asparagus in boiling salted water for 2-3 minutes until bright green but still crisp. Drain and plunge into ice water.
  3. In a bowl, whisk together olive oil, lemon juice, chopped capers, salt, and pepper to create the vinaigrette.
  4. In a large bowl, combine blanched asparagus and sliced radishes. Drizzle with vinaigrette and gently toss to coat.
  5. Serve on a platter garnished with extra capers if desired.
