Instructions
- Rinse asparagus and radishes under cold water. Trim woody ends off the asparagus and slice radishes thinly.
- Blanch asparagus in boiling salted water for 2-3 minutes until bright green but still crisp. Drain and plunge into ice water.
- In a bowl, whisk together olive oil, lemon juice, chopped capers, salt, and pepper to create the vinaigrette.
- In a large bowl, combine blanched asparagus and sliced radishes. Drizzle with vinaigrette and gently toss to coat.
- Serve on a platter garnished with extra capers if desired.
