  • 1/2 cup unsalted butter (113g)
  • 1 cup granulated sugar (200g)
  • 1/2 cup brown sugar (100g)
  • 2 large eggs
  • 1 tsp vanilla extract (5ml)
  • 1/2 cup cocoa powder (50g)
  • 1/2 cup all-purpose flour (60g)
  • 1 tsp espresso powder (5g)
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. Melt the unsalted butter in a medium saucepan over low heat. Remove from heat and stir in granulated and brown sugars until smooth.
  3. Allow the mixture to cool slightly, then whisk in eggs one at a time followed by vanilla extract until combined.
  4. In another bowl, sift together cocoa powder, flour, espresso powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
  6. Cool in the pan for at least ten minutes before transferring to a wire rack. Slice into squares and serve warm or at room temperature.
