Ingredients

Scale
  • 1 cup bell peppers (mixed colors)
  • 1 cup zucchini (sliced)
  • 1 cup cherry tomatoes
  • 1 cup baby portobello mushrooms (halved)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Soak wooden skewers in water for 30 minutes to prevent burning.
  2. Wash and chop the bell peppers, zucchini, and mushrooms into bite-sized pieces.
  3. In a bowl, combine chopped vegetables with olive oil, garlic powder, salt, and pepper; toss until coated.
