Description

  • ¾ cup brown sugar, packed
  • ½ cup unsalted butter, softened
  • 1 large egg yolk
  • ½ cup of your favorite jam (raspberry, apricot, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. Cream butter and brown sugar until light and fluffy.
  4. Mix in egg yolk until fully combined.
  5. Gradually blend in dry ingredients until just mixed.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and place on a parchment-lined baking sheet.
  7. Use your thumb to create indentations in each ball and fill with jam.
  8. Bake for 10-12 minutes until edges are golden. Cool before serving.
