  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 oz gluten free noodles (rice or corn-based)
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 tsp fresh thyme
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon (optional)

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté the onions until translucent (about 5 minutes).
  3. Add the chicken breasts and garlic to the pot; pour in enough broth to cover by an inch.
  4. Cook the chicken for about 15-20 minutes until done; remove and shred.
  5. Add carrots, celery, and gluten free noodles to the pot; return shredded chicken.
  6. Season with salt and pepper; simmer for another 8-10 minutes until noodles are tender.
  7. Stir in thyme and parsley just before serving; add lemon juice if desired.
