Instructions
- Preheat your oven to 400°F (200°C). In a large bowl, combine ground chicken, parsley, garlic, feta, lemon zest, salt, and pepper. Mix until just combined.
- Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
- While the meatballs bake, cook the orzo in salted boiling water according to package instructions; drain well.
- Toss the cooked orzo with olive oil, lemon juice, salt, pepper, and optional pine nuts in a large bowl.
- Serve baked meatballs over lemon orzo garnished with extra parsley or feta if desired.
