  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice

  • 1/4 cup extra virgin olive oil

  • 1 cup Greek yogurt (whole milk)
  • 1/2 cucumber, grated (excess water squeezed out)
  • 2 tbsp fresh dill or mint, chopped
  • Zest of 1 lemon

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Marinate the Chicken: Combine chicken breasts and marinade in a resealable bag. Seal tightly and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat Grill/Oven: For grilling, preheat grill to medium-high heat. For baking, preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  4. Cook the Tenders: Grill for about 6-7 minutes per side or bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
  5. Prepare the Sauce: Mix Greek yogurt, grated cucumber, chopped herbs, lemon zest, salt, and pepper in a bowl until creamy.
