  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • Green gel food coloring (to desired color)

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat sugar and eggs until light and fluffy. Add sour cream, oil, vanilla extract, and green food coloring; mix until combined.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Fill each liner about two-thirds full with batter and bake for 12-15 minutes or until a toothpick comes out clean.
  6. Allow to cool for five minutes in the pan before transferring to wire racks to cool completely. Frost with cream cheese frosting when cooled.
