Ingredients

  • 2 medium zucchinis (sliced into thick rounds)
  • 8 oz halloumi cheese (cut into cubes)
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 2 tbsp fresh herbs (thyme or oregano), chopped
  • Salt and pepper to taste
  • 1 tsp smoked paprika (optional)

Instructions

  1. Soak wooden skewers in water for 30 minutes to prevent burning.
  2. Preheat your grill to medium-high heat (about 400°F/200°C).
  3. Thread zucchini slices and halloumi cubes onto skewers alternately.
  4. In a bowl, whisk together olive oil, lemon juice, fresh herbs, salt, pepper, and paprika.
  5. Brush the marinade generously over the skewers.
  6. Grill skewers for 10-12 minutes, turning occasionally until halloumi is golden brown and zucchini is tender.
  7. Let cool slightly before serving warm off the grill.
