- 1 cup unsweetened coconut flakes
- 1/2 cup dark chocolate chips
- 1/4 cup maple syrup
- 2 tbsp coconut oil
Instructions
- Preheat oven to 350°F (175°C) if roasting almonds.
- Spread almonds on a baking sheet and roast for 10 minutes until golden brown.
- In a bowl, mix coconut flakes, maple syrup, and 1 tbsp melted coconut oil until well combined.
- Form small mounds of the mixture on parchment paper and press an almond into each.
- Melt dark chocolate chips with remaining coconut oil in a microwave-safe bowl, stirring until smooth.
- Dip each coconut mound into melted chocolate and place back on parchment paper. Refrigerate for 30 minutes until set.
