Ingredients

  • Natural peanut butter
  • Full-fat coconut milk
  • Sweet potatoes
  • Low-sodium vegetable broth
  • Yellow onion
  • Fresh garlic
  • Fresh ginger
  • Spinach or kale
  • Cumin and paprika
  • Fresh lemon juice

Instructions

  1. Wash and peel sweet potatoes, then chop them into bite-sized cubes. Dice the onion, garlic, and ginger.
  2. Heat oil in a large pot over medium heat. Add chopped onion and sauté until golden brown (5–7 minutes).
  3. Add sweet potatoes along with cumin and paprika; cook for 3 minutes until coated in spices.
  4. Pour in coconut milk and vegetable broth, stirring well. Bring to a gentle simmer.
  5. Add peanut butter to the pot and let it simmer for 20 minutes until sweet potatoes are tender.
  6. Stir in spinach or kale along with lemon juice just before serving.
