Ingredients

  • 2 lbs bone-in lamb chops
  • 2 medium sweet onions
  • 4 large carrots
  • 4 medium waxy potatoes
  • 4 sprigs fresh thyme
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Chop vegetables and trim excess fat from the lamb chops.
  2. Heat olive oil in a large pot over medium-high heat. Sear lamb chops until browned on both sides, then remove them from the pot.
  3. Add onions to the pot; sauté until translucent (about 5 minutes).
  4. Stir in carrots and potatoes; cook for an additional 2 minutes.
  5. Return lamb to the pot, add thyme, bay leaves, and beef broth. Bring to a gentle boil.
  6. Reduce heat to low, cover, and simmer for about 1.5 hours until the meat is tender.
