- 4 cups low-sodium beef broth

Instructions
- Chop vegetables and trim excess fat from the lamb chops.
- Heat olive oil in a large pot over medium-high heat. Sear lamb chops until browned on both sides, then remove them from the pot.
- Add onions to the pot; sauté until translucent (about 5 minutes).
- Stir in carrots and potatoes; cook for an additional 2 minutes.
- Return lamb to the pot, add thyme, bay leaves, and beef broth. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for about 1.5 hours until the meat is tender.
