  • 2 cups dried navy beans
  • 6 slices thick-cut bacon
  • 1 medium onion, finely chopped
  • ½ cup unsulfured molasses
  • ¼ cup ketchup
  • 1 tablespoon mustard powder
  • ½ cup brown sugar
  • 4 cups water or vegetable broth

Instructions

  1. Soak the navy beans overnight in plenty of water.
  2. In a large pot, cook the bacon over medium heat until crispy. Remove bacon but keep the grease.
  3. Sauté the chopped onion in the bacon grease until translucent (about 5 minutes).
  4. Stir in the cooked bacon, molasses, ketchup, mustard powder, and brown sugar.
  5. Add the soaked and drained beans along with enough water or broth to cover everything (about 4 cups).
  6. Bring to a boil, then reduce heat to low and simmer uncovered for 3-4 hours until beans are tender and saucy.
