  • 2 large sweet onions, sliced into rings
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Peel and slice the onions into thick rings, gently separating them.
  2. In one bowl, whisk together flour, baking powder, salt, and pepper. In another bowl, mix buttermilk and eggs until smooth.
  3. Dip each onion ring in the flour mixture, then the buttermilk mixture, and finally coat with panko breadcrumbs.
  4. Heat vegetable oil in a deep skillet to about 350°F (175°C).
  5. Fry onion rings in batches for 3-4 minutes until golden brown; flip halfway through.
