Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 cup granulated sugar
  • 1/4 cup whole milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Ice water as needed

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease your tart molds.
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly. Gradually add ice water until a dough forms. Wrap in plastic and chill for 30 minutes.
  3. For the custard, heat milk with vanilla until steaming (not boiling). In another bowl, whisk eggs and sugar until pale. Slowly combine with warm milk while stirring.
  4. Roll out chilled dough to 1/8 inch thick; cut into circles slightly larger than the molds. Press into molds and trim excess.
  5. Pour custard mixture into each shell until nearly full.
  6. Bake for 20-25 minutes or until set and lightly browned. Let cool slightly before serving.
