  • 1 cup powdered sugar
  • 1 tbsp espresso powder (or instant coffee)
  • 2 tbsp milk (or dairy-free alternative)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla until smooth.
  5. Gradually mix in dry ingredients until just combined.
  6. Scoop tablespoon-sized balls onto prepared baking sheets, spacing two inches apart.
  7. Bake for 10-12 minutes until edges are set but centers remain soft; they will firm up while cooling.
  8. For the glaze, whisk together powdered sugar, espresso powder, and milk until smooth.
