  • 1 leg of lamb (bone-in, 45 lbs)
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix rosemary, thyme, minced garlic, olive oil, salt, pepper, and lemon juice to create a fragrant herb paste.
  3. Pat the leg of lamb dry with paper towels. Rub the herb mixture generously all over the lamb.
  4. Heat a skillet over medium-high heat and add a splash of olive oil. Sear the lamb on all sides until browned (about 4-5 minutes per side).
  5. Transfer the seared lamb to a roasting pan and roast in the preheated oven for about 1 hour or until it reaches an internal temperature of 135°F for medium-rare.
