Ingredients
Scale
- 1 leg of lamb (bone-in, 4–5 lbs)
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix rosemary, thyme, minced garlic, olive oil, salt, pepper, and lemon juice to create a fragrant herb paste.
- Pat the leg of lamb dry with paper towels. Rub the herb mixture generously all over the lamb.
- Heat a skillet over medium-high heat and add a splash of olive oil. Sear the lamb on all sides until browned (about 4-5 minutes per side).
- Transfer the seared lamb to a roasting pan and roast in the preheated oven for about 1 hour or until it reaches an internal temperature of 135°F for medium-rare.
- Let the lamb rest for 15 minutes before slicing to allow juices to redistribute.
