  • 2 lbs beef chuck roast, cut into cubes
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can (13.5 oz) coconut milk
  • 1 cup low-sodium vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Select sauté mode on your Instant Pot. Heat oil and sauté onions until golden brown, about 5 minutes. Stir in garlic and ginger until fragrant.
  2. Season beef with salt and pepper; add to the pot. Brown on all sides for about 6 minutes.
  3. Sprinkle curry powder over beef; stir well to coat and cook for an additional minute.
  4. Pour in coconut milk and vegetable broth, scraping the bottom of the pot to release browned bits. Stir until combined.
  5. Seal the lid and set to high pressure for 30 minutes.
  6. Once cooking is complete, carefully release pressure according to manufacturer instructions. Open lid and stir gently before serving over rice or with naan.
