- 4 cups low-sodium beef broth
- 2 bay leaves
- 1 tsp fresh thyme (or ½ tsp dried)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop vegetables into bite-sized pieces.
- In a large pot over medium-high heat, add olive oil. Sear the seasoned beef until browned on all sides.
- Add onions and garlic; cook until onions are translucent.
- Pour in beef broth and add bay leaves and thyme. Bring to a gentle boil, then reduce heat.
- Cover and simmer for 1.5 to 2 hours until meat is fork-tender.
- In the last 30 minutes of cooking, add potatoes and carrots until tender.
