Description

Irish Beef Stew is a comforting dish that blends tender beef, fresh vegetables, and aromatic herbs into a warm, hearty meal perfect for gatherings or cozy nights in.


Ingredients

  • 2 lbs beef chuck, cubed
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced (Yukon Gold or russets)
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop vegetables into bite-sized pieces.
  2. In a large pot over medium-high heat, add olive oil. Sear the seasoned beef until browned on all sides.
  3. Add onions and garlic; cook until onions are translucent.
  4. Pour in beef broth and add bay leaves and thyme. Bring to a gentle boil, then reduce heat.
  5. Cover and simmer for 1.5 to 2 hours until meat is fork-tender.
  6. In the last 30 minutes of cooking, add potatoes and carrots until tender.
