  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 4 green onions, chopped
  • 3 tbsp sriracha sauce (adjust to taste)
  • 3 tbsp mayonnaise (try Japanese mayo for extra flavor)
  • 2 cups cooked rice or quinoa
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by chopping chicken into bite-sized pieces and dicing bell peppers and cucumber.
  2. Marinate chicken in a bowl with minced garlic, sriracha sauce, lime juice, and a pinch of salt for 20 minutes.
  3. Heat oil in a skillet over medium-high heat. Cook marinated chicken for about 5-7 minutes until golden brown.
  4. In a small bowl, mix mayonnaise with additional sriracha to create your sauce.
  5. Prepare rice or quinoa as per package instructions. In serving bowls, layer rice or quinoa at the bottom followed by cooked chicken and veggies. Drizzle with sriracha mayo.
  6. Top with chopped green onions and enjoy warm.
