  • 1 lb lean ground beef (80/20)
  • 1 cup Italian breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • ¾ cup ketchup (divided)
  • 1 cup canned tomato sauce
  • 2 tsp dried basil

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or use a loaf pan.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, eggs, parsley, garlic, and half of the ketchup. Mix gently until combined.
  3. Transfer the meat mixture to the prepared pan and shape it into a loaf.
  4. In a separate bowl, mix the tomato sauce with the remaining ketchup and basil. Spread over the meatloaf.
  5. Bake for about 1 hour or until it reaches an internal temperature of 160°F (70°C). Let rest for 10 minutes before slicing.
